A cool fermentation over 20 to 30 days ensures retention of all the fruit aromas and flavours of the grapes. Stainless steel is used throughout, with no maturation in wood, as the aim is to produce wine with vibrant and fresh fruity qualities. The colour is a pale, lemony-white with bright highlights. The wine is fresh and fragrant with an attractive floral bouquet. The taste is dry, with crisp mouth-filling flavours and a long, clean finish.
